I started working full-time in the spring. I thought I'd have lots of time for crafting once summer rolled around, but somehow chasing after little ones, working in the garden, running, etc. leaves very little time!
Anyway, I have tons of zucchini, and since I'm the only one who willingly eats it (I LOVE it, actually), I'm always looking for ways to sneak it into foods that my family will eat. My sister-in-law, Kristy, shared this recipe with me recently. We all loved it!
Zucchini Pizza Casserole
3 cups shredded zucchini and/or squash
1 cup Bisquick or flour
1/2 t. oregano (I used Wildtree's Italian Salad Dressing Mix)
1/3 cup oil
3 eggs, beaten
1/4 t. salt
pepper
your favorite pizza toppings
1. Mix all ingredients in large bowl (except for toppings, of course).
2. Press into a 9 x 13 baking dish. Bake for 20-25 minutes in a 350 degree oven.
3. Add sauce and toppings, and bake an additional 10-15 minutes.
Note: This has a ton of oil in it (the original had even more!). I will try using less oil and adding some milk next time.
